Linda Shaw has been a proud employee of Knudsen’s Danish Bakery, a family owned business, in North Rosedale Park for 8 years, greeting each and every customer she waits on with a big hello and smile.

1.)    Favorite sweet to eat?  Shaw’s favorite treat is the Pineapple Nut Slice Coffee Cake, which she recommends to all first timers. “You eat a little bit of it at time!”

2.)    Best part of working here? ‘The customers” she states enthusiastically!

3.)    Best way to describe the shop? Shaw describes Knudsen’s as both a pleasant and friendly atmosphere. “We’re all like a big family!” The first Knudsen’s opened in 1923 from a family of Danish immigrants with a passion for making sweets and that tradition continues today.

4.)    Why do you think the shop is so successful? Shaw thinks that customers come back primarily because of the taste and quality they offer, with a small mention to the friendliness of the employees.

5.)    What did I try? With the decadent scent of pastries floating throughout the bakery, I thought it only appropriate to try some of the many treats. I decided to try simple classics, such as the oatmeal cookie, chocolate chip cookie, the vanilla cupcake and the Ms. Shaw’s favorite, the Pineapple Nut Slice Coffee Cake.

The oatmeal cookie had a slight crunch and was crisp on the outside. The base of the cupcake was very soft and gave comfort with every bite. There was a good amount of vanilla cream frosting that was both sweet and tasty. The Pineapple Nut Slice was very moist, with a melt in your mouth texture. You don’t have to be a lover of pineapple to savor this treat with your coffee, as the gourmet quality was extremely enjoyable.

They do have a variety of birthday cakes which they are happy to personalize for you. Next time you have a special occasion consider shopping local and try Knudsen’s Danish Bakery!
